Low Carb Gluten Free Pizza

Having been diagnosed with diabetes I'm on a low carb diet. But I miss pizza! Not the bought ones (yuk) but my home made gourmet ones with fetta, spinach leaves, onions, capsicums.


 


But I've found a pizza crust recipe made from cauliflower!


 


I'm going to make it tonight. Fingers crossed.


 


Has any one made this before?

Nup...have to join that site, but here's a link to women's weekly diabetic recipes = 15 pages of them.  I usually adjust recipes to suit my own taste...there's no hard and fast rule = just substitute bad ingredients for good ingredients in the same recipes you love.

Gill if you are managing diabetes with diet only you can't have a real hypo. You can have one if you are having to take insulin. I have, however, had a couple of "false" hypo's where I felt shaky, broke into a sweat, blurry vision but they only lasted about 20 min's. It happens when your blood sugar levels drop (a good thing) and the body isn't used to functioning on that level. The body re-adjusts itself. The first time it happened I panicked and ate carbs but that's the worst thing you can do. The second time I just rode it out and it passed.


 


Cue - I'm soy intolerant so I can't have soy flour. I tried using almond flour but I had an allergic reaction so that's out 😞    I can have white beans though!


 


I've joined a Diabetes Forum and they are really helpful. Much more helpful than my GP who just told me to eat wholegrain breads and pasta. 😐


 



I miss chocolate but I am allowed one square of 70% dark chocolate once a week. It's too bitter to have straight so I melt it and mix it with a little Philly Cream Cheese.


 


Clair I can imagine on a cold winters day your hubby would miss a hot meat pie with lashings of tomato sauce!

I had a look at the diabetic recipes. Some of them I can adjust, thanks!


 


But this recipe for Apricot Cakes?


 


1 tablespoon brown sugar
12 canned apricot halves in syrup, drained
2 eggs
3/4 cup (150g) firmly packed brown sugar, extra
3/4 cup (90g) almond meal
1 teaspoon vanilla essence
1/3 cup (50g) wholemeal self-raising flour
½ cup (125ml) skim milk
¼ cup (80g) apricot conserve, warmed


 



This isn't exactly diabetic friendly 😮

Hey Cat I never follow recipes...they're just a starting point....btw....just thinking about it, I think I have the answer for pizza base...wholemeal lebanese bread or pita bread will do the trick.....just keep your toppings low fat, but there's plenty of  ideas on cheeses you can use.....I used to make quick pizza's on leb bread years back....works well.


 


don't know if you're lactose intolerant too though.....If you can find a fine flour that you can tolerate, any kind of indian, mexican or lebanese flat bread is do-able.

I have to stay away from all bread because I'm keeping my carbs very low. I aim for less than 30g a day. A medium sized pita/leb bread is around 25g in itself. My 30g of carbs come from mostly vegetables.


 


I'll try the cauliflower pizza crust and will post a photo if it works!


 


If it does, it's a great way to have a low carb, gluten free pizza made from just vegetables and cheese.

anything's possible  I'd be interested to see how you go with that or the white bean flower....are you allowed to add yeast? or do you have to stick to baking powder?

You can get some good recipes from the magazine Diabetic Living.  It uses some of the recipes from Better Homes and Gardens.  There are sometimes some surprising ingredients but they seem to work OK. 


The Apricot Cakes recipe is not as bad as it looks on paper....quite a few diabetic recipes seem to use brown sugar quite successfully.
