Having been diagnosed with diabetes I'm on a low carb diet. But I miss pizza! Not the bought ones (yuk) but my home made gourmet ones with fetta, spinach leaves, onions, capsicums.
But I've found a pizza crust recipe made from cauliflower!
I'm going to make it tonight. Fingers crossed.
Has any one made this before?

It won't be ready until I get off my butt and cook it. A couple of hours actually. My daughter is coming over for dinner so I'll ask her opinion .. I lubs experimenting on my kids :-x
Lyndal I feel sorry for people who are diabetic and think sugar won't harm them. Sugar is sugar. White or brown :^O

Well I am diabetic....4th generation actually, so I have had a bit of experience.
I am controlled with diet only and can eat a limited amount of sugar with no ill effects.

After a brief period on the lowest dose medication, I am back to diet controlled. However, this is how I think - if you are really missing your pizza, have it. Balance it out over a couple of days. Life is too short to make oneself miserable over small things, it's not as if you're craving a jam doughnut!.

Recipe Gluten Free Low Carb Pizza
Makes 2 pizzas.
Large cauliflower. Break up into florets or cut into pieces and place in a food processor. Pulse until it looks like the consistency of "rice". This only takes about 20 seconds. I did mine in two batches.
Place in a large microwave proof bowl. Microwave uncovered for 10 mins until soft.
Place cauliflower 'rice' into a new Chux or a clean tea towel and gather up the sides and twist and squeeze. I was amazed at how much 'water' came out. I did this in 3 batches. This is the secret to getting the base crispy.
Add 1 beaten egg and 1-2 cups of grated mozzarella cheese. Add salt and pepper. I would have added oregano and garlic salt if I had some.
Pre heat oven to about 200C. Place parchment/baking paper on each tray. This is very important otherwise it's going to stick to the tray.
Shape a pizza base. Don't make it too thick. If it's thin it's crispier. Cook in the oven for about 20-30 mins. Mine took 30 mins.
Pre-cook any toppings. I stir fried red capsicum, red onion.
Once base is cooked add tomato paste, grated cheese, spinach leaves, crumbles fetta, red onion, capsicum, herbs etc.
Place back in the oven for about 7 mins until cheese is melted.
YUM!!!

That looks great Cat but I would be concerned about the saturated fat. That's a lot of cheese.

The pizza I showed in the photo doesn't have extra cheese (only in the crust). These are large pizza's. We cut each pizza into 4 large slices and were full after 2 slices each.

I will give it a go too but without all the cheese I found a recipe for gluten and dairy free cauliflower crust pizza. Would have never thought of using cauliflower so thanks for the idea. 🙂
