I do love mushrooms and I made this recipe recently which I loved. It will only be an occasional meal because it's heavy on the calories I imagine. Yummo. It's a free Coles recipe
Creamy mushroom and spinach tagliatelle
40gms butter
150gms mushrooms sliced (I just used a punnet of Swiss brown button mushrooms)
2 cloves garlic, crushed
1/2 dry white wine
1 cup cream (I used the light cooking cream)
6 sun dried tomatoes, drained, cut into thin strips
150ms baby spinach
packet of egg tagliatelle
Melt the butter in a large frying pan. Cook the mushrroms and garlic over medium-high heat for 3 minutes or until the mushrooms have browned slightly.
Add the wine; simmer for 3 to 4 minutes or until reduced. Stir in the cream. Simmer for 3 to 4 minutes until thickened. Stir in the sun dried tomatoes and spinach. Simmer for 1 minute. Season with salt and pepper.
Cook tagliatelle according to packet directions. Toss with sauce. Serve with Parmesan cheese.

Sunds very delicious, j*oono. I love mushrooms in lots of different ways, even raw, sliced into salads. Will copy your recipe and try this week.

I hope you like it Erica. I did. You might need to adjust the amounts a bit if you are just cooking for two. Not me. We have big appetites, the lot of us.

By the way. I left out cup in the ingredients. You are right, it is 1/2 cup.

Thanks Freddie. I was hanging on to that recipe for about a year before I tried it. Very simple too.
