I Cube them first then par boil them, lot quicker and less cooking time

you can do some boiled eggs and cut into quarters  to add to the salad with a little bit of ham for something different.

Cut them first!

If you cut after boiling they look messy.

boil whole

sweat off bacon and onion, deglaze with chicken stock. Leave a little wet, but not like soup.

drain potatoes when cooked

cut when cool enough to handle

add hot bacon mix to potatoes

mix well/ coating potatoes

let completely cool

finish as normal (seasoning, eshallotts, dressing) however you normally finish it off.

I cube them first, and put them into a chip fryer basket to boil. When cooked but not soft, pull the whole basket out and dunk into cold water to cool them off quickly. Don't leave them sitting in the water though, they will absorb water.

small chat potatoes,skin on boil until tender.drain and leave to cool before peeling off the skins,once cooled slice into thin slices and add 1 small finely sliced onion.Into a bowl mix one egg,1 teaspoon of wine vinegar and 1 to 2 cups of pure olive oil...mix thoroughly till it  has a thick consistency  then pour over the potatoes,add salt and pepper to taste...this is my German Godmother`s recipe and it`s the best!!

This is my favourite potato salad recipe.

It is made with baby red  skinned potatos.  Slice them thickly and simmer skin on for 8 minutes until just cooked.

The dressing is extra virgin olive oil and white wine vinegar combined and the salad is topped with spring onions, baby cornichons and flat leaf parsley.

I cut my potato into cubes and then cook in the microwave. Haven't boiled a vegetable for at least 20 years. I always use the microwave.
