I just pulled a recipe out of the Woolworths Good Food magazine to try out. It is for roast pumpkin hummus.
All you do is roast the pumpkin first and then blend it with a can of chickpeas (400g rinsed and drained) 2 tbs tahini, 1 tbs lemon juice 1 tsp cumin and a clove of garlic.
Blend it up and stir in some chopped coriander.
I haven't made it yet but it sounds nice.
Oh, forgot, it says to use 250g peeled pumpkin cut into small pieces and then roast.

Thanks for the reminder... I have a pumpkin that needs cooking .. going to do a slow cook pumpkin soup.

Pumpkin & Lentil Curry
2 tab red curry paste; 400ml can coconut milk; 250g pumpkin, peeled and chopped; 170g green lentils.
Fry paste in a non-stick frying pan over medium heat until fragrant. Add coconut milk and half a cup of water and stir. Add pumpkin and simmer for 25 minutes or until almost soft. Add lentils, cover and simmer until soft.
Optional: Serve with rice and chapattis.

Homemade pizza - topped with small cooked pumpkin cubes, baby spinach leaves, mushrooms etc
Roast meat with roast pumpkin.

I use about double the amount of pumpkin to use it up. It feeds 4-6 people.

Otherwise I just chuck bit chunks of it on a tray with olive oil and drizzled with honey and bake it until it's soft.
Cook it until the honey starts to caramelise on the edges.

And another I do is throw the baked pumpkin on a salad mix with mozzarella and a lemon/honey/olive oil dressing.
