Hi Karen, Smaller bowl next time? ..sounds Yum though and I can relate to the temptation .
The heat is making me feel a bit sick today.Everyone else is hungry though so I'd better get some food sorted ...no idea what yet .The kids always ask what's for tea and I promise them that it will be food .You'd think they'd stop asking wouldn't you ?

We used to see eagles circling lots Clair when we lived at Lancefield, but I've never been close to a nest I don't know much about them, you'd think the babies would stay with their parents longer. No idea here

I used this one from the Internet but I changed it. It says to use 125g of Philly, you need more. I doubled it.
Base
1 packet of butternut snap cookies
60g butter
Filling
250 g Philadelphia cream cheese
3-4 fl oz (about 1/2 cup) lemon juice (3 lemons)
1 tin condensed milk
Method Base
Crush the biscuits (with a blender/food processor, or with a rolling pin). Don't use a rolling pin
Melt the butter, (in the microwave) then add to the biscuit crumbs and mix until combined.
Press into the bottom of a foil-lined tin/pie dish. I don't use foil, I spray a spring-form tin with olive oil spray.
Refrigerate while you make the filling.
Method - Filling
Beat the Philadelphia with a splosh of the condensed milk until smooth. Add a bit more condensed milk, beat for a few minutes, then add the rest of the condensed milk. Gradually beat in the lemon juice and beat for another 2 minutes. Beat until all the lumpy bits are gone. Taste for lemoniness. If not lemony enuough, add more lemon juice.
Spoon onto the base.
Chill overnight, or for a couple of hours if you can't wait that long...
If you Google this recipe the pics show me that the author used a smaller spring-form pan than I do as her filling looks fatter. I use a larger tin, about 23cm. Maybe if you use a smaller tin you need less Philly?

Karen, you have more trouble with smoke alarms than anyone I know. maybe they're sellng you dodgy ones?
