it is SO nice to be able to talk about our show and not always agree,,without fighting or getting nasty with each other,you know that? 

i had to give up talking food shows on the .com boards because i would get yelled at and insulted for disagreeing with someone's opinion,or with the judges opinions. that was the WORST! 

it was like...food politics,lol! especially when it came to bobby flay. the guy is a masterful chef,sure. but he's still human,and even he says he has second guessed himself and wished he could change his mind. i brought that up after seeing the interview with him where he said that,and was beaten into a pulp for bringing it up! 

people didn't believe he could EVER make a mistake,or SAY that he has, i was called a liar,even after posting a link to the interview,i was told it was faked!!!

being on tv doesn't make a chef a god,or infallible,but you'd never know that from some of the folks at the cook's nook,lol!

i gave up after awhile.

 

i see your points too,which is cool,it makes me think outside my own little cookbox POV. as much as leslie(old dude) annoys me,he IS a talented cook. it's his personality that bugs me,really. but then,joe annoys me too,lol!

Old dude does seem a bit pretentious, but the thing that I can't help but admire is that none opf the people on MasterChef are professional Chefs - never been trained - lots of them are self taught, that's pretty cool really. I mean anyone can follow a recipe, but some of these guys do so much more than that. There are some things that just can't be taught, they're like an internal instinct iykwim, and I have to admire genuine talent.

lol,you got it!

so my tv guide says the challenge tonight is the high value entree one,where the jusges assign a dollar value to each contestant's entree. this one always gets to me,the prices are outrageous! it reminds me why we only eat out at diners!

The challenges..

 

The first one 0- the market trip for 3 meals for $35 cost price.

 

The results were pretty ordinary, not impressed at all

 

The second one -

I liked the look of Scott's dish - the scallops, shame the pickled veg didn't pickle - but really, its pretty hard to stuff up the presentation for scallops, so really, it should have looked good.

 

Hows the chick who turned into a love sick fool over Rock?

 

and poor Numbers - he left off half his protein AGAIN - this guy just doesn't seem to be able to "get it" ya know? I really am warming to him, but I'd hate for him to be my head chef or in control of any kitchen where my money was ohn the line.

 

And gnome man - he's going down. He can't leave quick enough for my liking, he's just an evil, sinister little man. I'd hate to work for him, and I'd hate him to work for me.

 

After tonight, I really am looking at scott as the front runner atm.

 

He holds his own, can perform under pressure, seems to be a bit of a sweetheart with a nice disposition. Seems to work hard - he can cook, there is no doubt about that. So for me, he is my pick

i was screeching at the tv,i was so mad! and the light of my life stuck his head out the bedroom door and shouted"TO BE CONTINUED!' he didn't duck fast enough this time,got the tv brick square in the chops,lol!

 

that WAS a cool prize,and i agree,i though it was sweet of scott to buy for his wife. let's hope he got the sizes right,lol! 

 

i was HORRIFIED at what the bathrooms in particular looked like,no wonder poor rochelle heaved!  

 

yeah,the market challenge could have been more impressive,from what i saw in the cold cases. kashia really needs to expand her repertoire,she's good at beef,but there's more to life than steak!

 

what on this green earth was blondie THINKING???? FLOUR IN POTATOES???? and everybody kept telling her this was NOT a good idea and she just blew them off and did it anyway!! how did she manage to get them that soupy anyway???

 

i think if scott had pickled something softer,like caauliflower,or baby corn,he'd have been fine in the time frame,but carrots take at least 12 hours for any flavor to infuse.

 

kashia is the one hot for rock,who,imho,has lost WAY too much weight,i hope his health is okay. dana was as cute as ever,she looked great!

 

numbers...oh,numbers...GET A CLUE!! and the worst part was when he brought out the other chops and they were cooked correctly,i felt so bad! although at least he wasn't alone this time. half a cornish hen? REALLY??? i'm small, and even i can eat a whole cornish hen!

 

now,don't go changing nicknames on me,girl! i take it gnome man is redbeard,jason? didn't like him in season 9,like him even less now. i definitely couldn't work for him, i'd end up in jail,for sure.

 

scott really did do well this episode. if he keeps that up,he's a definite front runner!

 

could be him and joy,in the end. IF she gets past the whole weeping thing,NOT professional.  i cried 3 times at my last job, all 3 times were when coworkers passed,and i got past it fast,so i could do my job and then mourn.

 

i'll let you know if i see any "spoiler" commercials,lol!

The Market Challenge: - surprised me. for a $35 food cost, they should have been turning that into $105 menu cost. I think the closest they came was about $75 - They'll go broke if they operate their own restaurants with a 50% food cost

 

I was wondering about the potatoes? I can't for the life of me think what she would have done to make them soupy - I mean surely she drained them before mashing them? Even the time I minced them, they lost their stiffness, but they didn't resemble soup or go runny, but they were super shiny LOL - I reckon that must be what she's done, ya know... run out of time and stuck them through some food processor, but sheesh, it was only one portion, not like it would have taken her hours to do by hand

 

The Carrots - LOL - that actually made me throw up in my mouth a bit, I just would never have put carrots, pickled or otherwise with scallops, over here carrots are a pretty common veg, do they have a higher profile in the States? I know with Japanese cooking they use pickled ginger, so maybe that was the kind of path he was thinking...? Can't remember his sauce, was he trying for an Asian fusion kind of thing?

 

Kashia - I have never known a grown woman to blubber like thaT over a boy... that was just embarrassing, I reckon. But Joy cracked me up when Kashia went back and stood beside her - made some comment like "You got to stand beside Rock, did you get to rub his head?" hahahaha

 

Numbers is just goofy, eh?

 

The cornish hen - ooohhhh remember that dude whose signature dish was a cornish hen in a pumpkin? That cracked me up

 

I cried ionce in the middle of service (a few times outside of service, but not in front of anyone)

 

It was my second night on Saucier. My first night, the night before, I had been on Entremettier, and just as the restaurant opened, Chef asked The Saucier and I if our sections were ready, we said yep, so chef said, righto, switch sections... No warning - nuffin - and I fluked my way through that service somehow, only 70 odd covers though, but somehow pulled it off..

 

Then the next night, had 200 booked, but they all came in at once, no 0one staggered the biookings so I never even giot an order before 7:30 or so, and by 9pm I was soooo far in the weeds, not even a lifeboat could have gotten me out. They were calling orders away that i hadn't even read and to top it off, the wait staff had screwed up their table numbers and 3 dif sections had a table 8, so they would call a table 8 away, I'd find the docket and cook and send (had soo many dockets in they didn't even fit on the board - were still on the micros machine!) then the waiter would bring the meals back saying "that's not what I ordered....." happened twice before we realized they'd screwed up the table numbers and I had 3 table 8s! So not only was I already in the weeds, but I was cooking refires cos the waiters couldn't set up their restaurant... and of course they were on the fly, so it stuffed everything behind them up...

 

Eventually, I said to the chef de Cuisine that i needed help - I just had stuff everywhere, I couldn't remember what was in the oven, what was ready to be fired - was crazy- and he just went nuts at me. I called him an **bleep**hole, and he just flew over the pass and was screaming in my face. Then I cried.

 

*sniff*.

 

*sob*

 

*wipes nose up sleeve*

 

He asked me did I want to quit and go home.

 

Blubbering I said "No"

 

So he gave me a cigarette, told me to go outside and smoke it and get my act together

 

When I came back in, he had cleared down my section for me, got the KPs to restock all my pans etc, and it was just like starting again..

 

Then he said, "are you ready for round 2"

 

and the rest of the night went off like a frog in a sock - smooth as...

 

That chef is my best friend now, but he's still an **bleep**hole LOL

at LEAST 105! in past seasons people have gotten 40 and up for certain entrees, one being a lobster tail stuffed with bleu cheese and baby crawdads,it had some kind of deep fried mushroom as the side,i forget what kind. 48 BUCKS!

 

i was trained to keep food cost at 28% or under,labor cost at 25%,because leases are SO high in massachusetts. overhead was the biggest cost at 34%. making a profit was a thin line.

 

all i can think is she either didn't drain them,or used skim milk,maybe. they looked NASTY! 

 

carrots are just everyday here too,and frankly,pickled ANYTHING with scallops is just SO wrong!! but then,i don't get the whole fusion cooking thing anyway. too old,i guess.:)  i think his sauce was thai -inspired? can't recall.

 

i got a kick out of joy saying that too,kashia turned purple with embarrassment,lol! i wasn't even that bad when i got to meet loretta lynn,one of my country heroines! 

 

oh sweet lord,i DID forget punkinman!! i cringe just to THINK of that one! or the chick that did the crab stuffed baked apples,did you see that one?? bleeechhh!!!

 

 

what you describe is what i did to shawn when he became our catering manager,almost! we had 3 conventions going in 3 halls,and i had 4 cocktail parties upstairs i was working alone. chef stafford got a call that there was a popup cater for 56,full italian buffet,due out in an hour,and he was FREAKING! he was on the edge of tears,and i grabbed his ear and said' if i handle this alone,you walk,and i take your job,wussyboy!"( i didn't want his job,but it was all i could think of at the time),and he shouted back that i was a pushy broad who needed to just shut up and stormed outside.

we got the sauces cooking,lasagna in the oven,pulled 2 servers to get the other stuff together in 10 minutes. shawn came back in,redfaced,and determined to pull it off alone. i DID see tears then,and we've been friends ever since.

this is why he wants me to work with him again,even though he fears me,lol!
