I have never made a crab cake, so i need to make some and see if I can cook them, so I know why the competitors on Hells Kitchen have so much trouble with them.

 

I am thinking I need chives though, and the ones I am growing aren't big enough to harvest yet and I didn't buy any today, so will have to go back to the stores tomorrow by the looks.

 

I'll check out some recipes before i go to make sure i have everything else they say.

I'm not used to this "look on the net" for recipes LOL

 

Old habits die hard, I either go through my recipe cards (still in folders etc, not even on a word document) or cook books.

 

I find it hard to trust recipes I've never used - there are some truly awful ones out there

 

but the net is ok for reminders etc, you know quantities or "that missing ingredient", or general ideas on where to start - and I like looking at the pictures - a cookbook or recipe without pics is useless LOL (That's what really irks me about Robuchon's cook books, no pics to show you what it's meant to look like LOL)

 

But I will get better, I'm learning to google rather than head for the books

it took me a long time to get used to online recipes too,but i had no room for all my files and books at work. and you aren't just kidding,some of the recipes you find online ,it makes you wonder if they're written by aliens who watch bad food shows in space,i swear!

one of the reasons i like that site is that everything comes from home cooks. i've found really old recipes my gramma used to make,that came from someone else's family files, like real red velvet cake made with beet juice instead of food coloring,may cakes,buttermilk spice cake, REAL pan fried chicken,and "local" specialties,it's very cool! 

i'll bookmark that gourmet traveller and look it over, i can always use new ideas!

and how's his attidue towards women? I mean he went on his sexist little rant, and the issue had nothing at all to do with the fact Andie is a woman. He got his back up cos a woman was his supoerior and told him to pull his head in FGS. I'm glad he's gone - and then how was his little departing speech? He reckons he is the best there so he is the winner of hells kitfhen

I reckon I could even tell the difference between chicken and turkey

I doubt I would have told the difference between the two cheeses - maybe? but I don't think so

 

but calling hot dog tuna, and can't remember what they said for eye fillet - but it wasn't evennbeef!

 

and things like mango - like those things have pretty distinct tastes\

 

that surprised me - yeah a lot of that would have got me, but then some of the ingredients were pretty distinct.

 

dunno

 

but I reckon the prize today was sucky LOL

 

compared to some of them, an ice skating session?

 

I woulda felt ripped off LOL

crikey-OMG!! i almost came in and posted a spoiler when andie went SMOOTH off on anton,i was on the floor laughing!!! he's a"winner",alright, but i don't think he'd like the midwest definition!

 

gabriel and rochelle ROCKED THE HOUSE! especially rochelle,watching her was like watching ballet,she was just perfect! i was pleased when gordon talked to numbers and helped him get his confidence back,and his compliments to rochelle were sincere and well deserved. 

 

blondie,on the other hand, trying to take credit for the great service,when most of it came from numbers and rochelle,i just wanted to SLAP her! i just can't give her a pass because of her age,sorry. you take credit when it's due,only.  you take responsibility for screwing up the same way, if you did it it,own it. 

like scott and the chicken,he never even LOOKED at what he sliced. i kind of got where rochelle was coming from,her chicken was just barely pink,i might not have seen that myself,but come on, scott,that was DANGEROUS! 

anton blaming the OVEN???SERIOUSLY??? and then trying to claim the ovens were"different"???? OMG!!  and scott saying he "trusted' anton when he sliced the chicken/ since WHEN has he trusted anton??? blame game gets you booted!

 

i was trying to remember last night,and i don't think there ever has been 2 people on one team who got NOTHING right in the palate test. frankly,i was shocked at blondie,cheddar tastes NOTHING like gruyere,gimme a break!  jason,i kinda figured he'd screw up on the palate test(lol on the thong!). the hot dogs cracked me up!! i'm not a fish or a hotdog eater,but i would certainly know the difference just from the texture,much less the taste.

and i DEFINITELY know the diff between chicken and turkey,kashia disappointed me on that one. the beef,oh, the beef...clueless!! and the green beans,omg,i laughed so hard!

 

i have to agree,the prize did suck,even though it was an olympian teaching them.poor kashia was terrified!

Andie going off cracked me up!

 

Not cos she was going off at someone, I just never expected that from here - she sure is a fiery little rocket, eh?

 

I thought Gordon was in fine form that episode, he gave a few of them a pep talk which reminded me that we only see the wow and shock factor, Ramsay must have seen a different side than I had seen - I had written Numbers off, so it soooo surprised me to hear what Ramsay had to say to him.

 

That made me think that Blondies response may have been due to editing, ya know? I mean is anyone really that full of themselves?

 

I felt a bit sorry for Scott - to me he does seem to at least be trying to be a teram player. He doesn't seem to just sit back and watch other sections if they are in the weeds, I get the impression he tries to help out when he has time. I agree he is probably seeming a bit OTT, trying to make sure Ramsay notices, but again, maybe that's in the editing

 

I can see where he was coming from with the chicken - Anton is experienced and did say it was ready, but yeah, he should have picked that up, just the texture there when slicing should have alerted him to how undercooked that was, even if he didn't check. He's not an apprentice, and at the very kleast, must have watched a million other HKs to know that Ramsay is pedantic about his chicken. I wonder if he was doing the same thing blondie did with the scallops -purposely trying to point out a weakness in a competitor?

 

OMG! The Ovens!\

I got where he was coming from too on that, cos even the same oven can operate differently, but he used the exccuse once and got shut down, and then just wouldn't put the stick down.I've had two ovens side by side operating differently, all you need is the pilot to get knocked during cleaning and that can cause different results

 

Plus it appears that he was told it was 14 min and not 18 mins - so he did look like a fool.

 

It was rochelle that really shone in the taste test, eh? Ramsay will take note of that, and blondie was one who did really badly, I reckon that may have been her nail in the coffin - I think it was Nona who sailed through on her palate - Ramsay really puts a lot of emphasis on that.

 

But it isn't like you can feel a wellington. to know how cooked it is. I don't know, niot in theior position, hard to say what i would do, but I do think knowing the trouble people have had with wellingtons in the past that that I would have practised before service (he has had a few days) or at least used a meat thermometer. Started checking around the 10 minutes until he new he had nailed it?

 

I know its not ideal, but if he cut undercooked, he could still put them back in the oven, but there is a big difference between a MR and a WD, his wellingtons whilst not grey, certainly had no pink, and they weren't moist, so really even past WD

 

But I do find it hard to believe that the ovens could have been different by 4 minutes - that's a 20 - 25% variance - that big a difference, it would have been noticed on everything, not just the wellies

 

and the prize - they could have at least chucked in lunch or a free set of frypans or sumfin.

 

They usually have such brilliant prizes.

 

 

hahaha laughin at Rochelle churning the uicecream with no mix in the churner - and to be caught on TV - embarrassing! I wonder how long she was churning for before she realized? I hope it was only a few minutes LOL

 

Imagine if she had have sat there churning for the whole 45 minutes, and then iopened the churn and opened it to find it empty!
