My OH has been watching My Kitchen Rules and some other cooking shows.
He has been asking me to cook some of the recipes he has seen. He wants me to cook the pigs cheeks he saw on MKR.
My butcher is having trouble getting the pigs cheeks. He can only get the whole pigs head.

Maybe it's time for your OH to start learning how to cook these dishes himself?
or you could make a suggestion on where to put the pigs head?? lol

Get the head and cut the cheeks out?
Substitute Beef Cheeks?
Then let the OH go wild with the rest of the head - stock, whatever he does, or dry it out and stick it on a pole at the front door to deter unwanted visitors.

Does the head come with the tongue and ears?
Can do some great stuff with those if you're into that kind of stuff.
Pigs ears and snout make the best crackling if you singe the hairs off first (and wipe his little nose)
Tongue you can make a pressed terrine etc and use it for cold meat on sandwiches and the likes.
The eyes would be an interesting Trick or treat Gift for Holloween.
String the teeth on a necklace - perfect gift for that someone special in your life, or Mother's Day is soon, tell hubby you're all set, got the gift of your dreams!
The fat under the chin is good lard for cooking with or greasing the terrine molds etc for the terrines or pastry cases
maybe substitute the Babe fat for the suet in your Christmas Pudding and have Christmas in July a little early?

He was telling me his mother used to make Hladetina as a special dish at christmas time. It is a type of brawn make with the head and the trotters.

ERK!
My father used to make brawn when I was a kid. I wouldn't eat it. He used also to heat buckets of tallow on the wood stove. This was used to spray on pastures to prevent bloat. The smell was atrocious.
