I love raspberries.

 

My last trifle was made with raspberries and fresh berries but why are they so expensive at Christmas?

bushies,here's a pasta bake with chicken and bacon for you. 

 

8 ounces of rotini pasta

1&1/2 pounds of boneless chicken breast(cut in bitesize pieces)

one pound of bacon(make sure it isn't too lean,needs to be fatty)

1 cup chicken stock

roughly 1/4 cup of flour

1 large can of crushed tomatoes

1/4 cup each of red onion and bell pepper(any color)

1/4 cup of garlic oil

1/2 cup of dry parmesan cheese

 

 

boil the pasta for about 9 minutes,until it's soft,but not quite done,then drain,rinse in cold water,then soak in cold water until you need it.

cook the bacon very crisp,and set aside to crumble later.make a simple roux with the bacon grease and the flour,add the chicken stock ,boil for about a minute,then let stand to thicken.

meanwhile,drain the tomatoes,and sweat the onion and pepper in the garlic oil.then add the chicken and saute it until done. add the tomatoes and the chicken sauce,and cook JUST until it boils,then take it off the heat.

drain the pasta well,add to the mix,and dump it all into a glass baking pan. 9" x13" works very well.

top with the parm,cover and bake at 325F for 30 minutes,then uncover and bake about 15 minutes,until parm is toasted. top with crumbled bacon,and eat!

i think you'll like it,you can also add stuff like broccoli,or cauliflower,peapods,most about anything,really. 

i make it with pork,too! ๐Ÿ™‚

The spinach pie,posted by lurker, sounds really good. 

 

I have a recipe for stuffing. 

 

Quick n easy sausage rolls

 

1 box stuffing(cooked as directed on box)

1 onion chopped and browned in olive oil

about a pound to 1 1/2 lb of ground sausage I(s that about 1/2 kilo?) 

spiced as desired

1 pkg, (2 total) frozen puff pastry sheets. 

1 egg.

 

Gravy if desired. 

 

Cook the stuffing 

Add the cooked onions and cooked stuffing to the sausage. Mix together. 

 

Defrost, and Roll out  the puff pastry sheets.

 add 1/2 sausage mixture to each sheet. 

Seal the outside edges with a bit of milk. 

 

Cut a about 6 V's on the top of the dough. Don't touch, or overwork the dough too much. 

 

Brush with egg whites. 

 

Bake in the oven for about an hour(350 degrees), or until the pastry is nice and brown on top. 

 

Serve with Mashed potatoes and gravy. We like HP sauce on the rolls too.

you can skip the tomatoes,if you don't like them and make extra chicken sauce,if you like.

Tonight's dinner...faux chicken pot pie

1 large cooked chicken breast cut into 3/4 inch pieces
2 tblsp olive oil
1/2 white onion chopped
4 large carrots cut into small pieces
1 1/2 cups frozen peas
1 can chicken broth
1/2 bag Ore-Ida O'brian potatoes
1 cup milk
3 heaping tblsp flour
2 tblsp butter

biscuits for top
2 cups flour
2 tsp sugar
1 tblsp baking powder
1/2 tsp salt
1 stick butter
1 cup milk

1.  Saute onions in olive oil until they are a bit translucent
2.  Add carrots, meat, broth, potatoes and simmer about 20 minutes until potatoes and carrots are tender. 
3.  Put milk in jar with lid and add flour.  Shake until flour is mixed and add to mixture.
4.  Stir in 2 tblsp butter.  Continue cooking until it gets thick.  Add the peas at this point.
5.  For the biscuits, mix all dry ingredients and then cut in the butter with a pastry cutter.  Once the butter is incorporated into the dry ingredients, stir in milk.  Form by hand into biscuit shapes and place on top of chicken mixture in the same pan you cooked it in. 
6.  Bake at 475 for about 15 minutes or until biscuits are browned.

Sin............I am going to give your chicken a try tonight.........(I have to make a few changes because hubby has diet restrictions).............................how many grams in a stick of butter?
