I love raspberries.

 

My last trifle was made with raspberries and fresh berries but why are they so expensive at Christmas?

hmm, sorry about the layout of the post it won't post how I typed it !! anyway, next recipe......This is good to use up veg......just make and adjust amounts to what you need.......chicken breast, sliced or cubed........potatoes, capsicum, onion etc......1/4 cup balsamic vinegar.......2 tbls olive oil.....2 tsps brown sugar.......dissolve sugar in vinegar and oil.....put chick,veg in roasting pan and pour mixture over.....cook about 30 mins at 220........I love it when the balsamic gets all sticky !

Lime Drink..........2 limes.....100g castor sugar....3 tbls condensed milk....750 ml water.....1 cup ice cubes. grate rind into blender, cut pith off and cut limes....put in blender with other ingredients and blend....serve over more ice. you can drink this as is OR add whatever booze you like.

Soulart, How long can you keep the chilli jam in the fridge?

 

It sounds really interesting but I don't suppose you would use a lot of it at a time.  I'm going to try that one.

There are probably a million recipes for chicken salad.

I soaked lettuce, cucumber, tomatoes (whole), and celery. Then I chopped them up and drained them. I added sugar snap peas.

Then I plated the salad ... I added chopped red onions to mine (the kid doesn't like them) and chicken.

While I was doing other things, I made a dressing of lemon juice, olive oil, rosemary, basil and oregano.

So, then the dressing went on to the salad ingredients.

Twenty minutes later, I enjoy the lemony dressing taste in my mouth.

That sounds so good.... must be some condensed milk

It is yummy karli. joono, I guess it's like any relish type of thing? I've never had to throw any out as OH loves it with just about anything lol and I think the vinegar would help preserve it. You can add more or less chillis ofcourse. I used to take it to barbies when I was told not to bring anything and there'd be none left.

Spinach Pie (variation on spanakopita)

Thaw and drain a packet of chopped spinach (or use fresh if you have some) mix with a chopped brown onion. Mix in 200-250 crumbled feta cheese and a handful of grated cheddar. Brush a lasagna type dish with melted butter then layer 3 sheets of filo pastry brushing each with butter as you go. Press spinach mixture into dish. Whisk 5 eggs, add salt & pepper. Pour over spinach. Layer with another 3 sheets of butter brushed filo. Cook 150deg for 45 minutes or until golden brown. Serve warm or cold.
Sometimes I add toasted pine nuts to the spinach or sprinkle the top with sesame seeds. It's a good idea to cut the pastry before you cook it, it just makes it easier to manager when you go to take it out of the dish.

If I don't have at least 1 of these in the fridge when the family arrives for a visit there's much disappointment 🙂

Baby Pecan Pies (these are a bit fiddely but well worth the effort, they freeze really well too and can be taken out and thawed at a moments notice)

Put 125g butter, 1c flour and 1/2c icing sugar in food processor and run until it clumps into a ball. Divide into 24 balls and press into well greased mini muffin pans. Put in the fridge for half an hour. Roughly chop about a cup of pecans and put into pastry cases. Mix 60g melted butter with an egg, a cup of brown sugar and some vanilla essence. Mix until smooth and "gluey". Spoon over pecans. Be careful to wipe up any spills or they will stick when you take the out of the pan. Cook 180deg for about 20 minutes or until pastry is golden brown. When they are cool enough to handle give each pie a little twist to loosen then cool on a rack. Yummo 🙂
