Roast pork is is our near future, TGSE. I love my crackling. We get our groceries delivered and my last order included a pork rack ... and they were out of stock on the day ... I'm still craving it.
For years I couldn't get a decent crackling ... I think I just hated the idea of putting on SO MUCH SALT. Then, when we had a turbo oven, the crackling just worked without any help. Now, despite hardly ever adding salt to my cooking, I'm a convert to loads of olive oil and salt on the rind.

I have found that since I have started cooking pork in the Weber only I have perfect crackling every time.

Lurker, this is the recipe I used for the chicken dish. I have made the pies before but the filling is just so beautiful it makes a nice casserole. I used chicken fillets instead of chicken thighs. I always think there is too much fat in the thighs.
Go easy on the tarragon though because it it really quite a strong flavour. I used only about a teaspoon of chopped fresh tarragon instead of a tablespoon.
