I realised yesterday, that while I like minced beef I know very few recipes for it:
Spag bol
Stuffed capsicums
Meat loaf
Meatballs
Recipes, suggestions, and ideas are all welcome.

if your into asian tastes - minced beef with eggs
300g mince
1 and a half tablespoon soy sauce
3 teaspoons sesame oil
1 tablespoon Chinese rice wine
1 teaspoon caster sugar
1/2 teaspoon salt
3 tablespoons peanut oil
1 red onion, cut into thin wedges
1 red chilli ( i never add this)
3 eggs
black pepper
break up mince with a fork , put it in a bowl with 1 tbs of the soy sauce, 2tsp sesame oil and the rice wine. stir in the sugar and salt and lots of black pepper. Leave to marinate for at least 15 minutes - no more than half an hour.
Heat 2 tbs of the oil in your wok, let it get very hot. Add the onion and chilli and stir fry for 2 mins, until it begins to colour. Add the mince and let it cook until it becomes golden but not all browned. Drain in a sieve.
Wipe the wok clean (try not to burn yourself) and add remaining oil. While the oil heats, crack the eggs in a bowl and add the remaining soy sauce and sesame oil, season lightly with black pepper - give it a bit of a stir. When the oil is hot, tip the eggs in and scramble for about 1 minute, until mostly set but still moist and creamy. Return the mince mixture and stir fry all together for 1 minute.
Serve with rice. I like to put Kecap Manis on top (sweet soy sauce).

I make pretty basic rissoles, easy though. Fry off some diced onion, add to low fat minced steak. Mix in some grated zuchini or carrot, just depends what I have. Add some worcestershire sauce, a little black pepper and a little salt. Shape, and cook slowly so they cook through and don't burn or dry out.

The other day, I had some beef mince that I needed to use. I decided on meatloaf. Now, usually when I make meatloaf, it's a pretty dense, firm thing that you can slice thinly. I wanted something moister. I thought of using canned tomatoes, and I did a few searches on "meatloaf canned tomatoes" and came up with lots of recipes for meatloaf and fresh tomatoes, and meatloaf and tomato sauce. I found a few opinions on the idea of meatloaf and canned tomatoes, which were evenly divided on whether that might or might not be a good idea.
I opened a can of tomatoes, chopped some brown onions, found the appropriate baking dish, got the mince out of the fridge ... I added a layer of mince, then some onions, then some tomatoes ... then another two layers of mince, onions and tomatoes. On the top I put some sliced red onions (I wouldn't do that again, they got rather burned, but they were leftovers that I wanted to use up, so it doesn't matter).
Ok, so I had everything in the baking tray ... I heated up the turbo oven and then put the meatloaf in to cook.
It didn't take long before it was smelling GOOD.
Now, one thing that happened was that the tomatoes created a lot of liquid in the meatloaf. I took a ladle and removed most of it.
Maybe next time, it would be a good idea to strain the canned tomatoes?
Anyway, I just kept cooking it until it was pretty much done, then I added 4 slices of bacon to the top.
Cooked until that was crispy, then served the meatloaf with salad.
It was pretty firm ... it could have been sliced for a (messy) sandwich ... but very moist and tasty. Voted the best meal of the last week by my son.

I found that nice easy recipe for lamb triangles. I should have known it was in my journal. I used premium beef mince. I guess they were like samosas.
Makes 12
1 tsp vegetable or peanut oil
1 brown onion, finely chopped
1-1/2 tablespoons mild Indian curry paste ( I used Tikka Masala paste)
300gm lean lamb mince (I used beef)
1/2 cup frozen mixed veggies
3 sheets frozen puff pastry, thawed
1 egg lightly whisked
1. Preheat oven to 200 C/180C fanforced.
Line baking trays with baking paper.
Heat oil in a frying pan over moderate heat. Add onion. Cook and stir for 2 minutes
until soft.
2. Add curry paste; cook and stir for 30 seconds until fragrant. Add mince; cook, stirring to
break up lumps for 3 minutes or until browned.
Stir in vegetables. Cool slightly.
3. Cut each pastry sheet into quarters (squares). For each triangle, place 2 heaped
tablespoons of mince mixture at centre of pastry square.
Fold over to form a triangle and seal edges with a fork. Repeat with remaining pastry to
make 12 triangles.
Place on trays, brush tops with egg. Bake for 12 minutes or until golden and puffed.
Good to serve with Tzatziki or a yoghurt and mint dressing.
