To replace potato risotto is best made with arborio rice. High fibre low gi. It actually helps push everything through so your body has less time to absorb nutrients and the high fibre absorbeds fat from the blood. Eat it every day

Thank you.  I will have to learn how to make risotto 🙂

At the moment it is rabbit food, green leafy stuffy plus tomatoes and beetroot, peeas and corn plus a small amount of meat. Probably not ideal for a diabetic diet but hopefully better for us than  what we have been eating (big slab of meat, lots of bread, mashed potato and really bad things like cheesecake, and appleturnovers and cream and chocolate  mmmmmmmm *drool*  chocolate.

Eat nuts for snacks. You should eat every two hours but only small portions. It's easy just add a snack if nuts between the three meals. All those foods you mentioned are diabetic friendly. If you eat 28 grams if walnuts a day you have all of your omega 3. Walnuts do nit contain any if the micro plastic particles that all sea food now contains

I dislike cooked vegetables, will eat them when they are baked, but prefer fresh salads.

Shopping for my salads;

Cellery, carrots, capsicum, cucumber, tomatoes. mushrooms, red onions and mixed green leaves.

A little salt, lots of black ground pepper and lemon juice.

This will go with hard boiled eggs, tuna in brine, steamed fish or sardines.

Every now and then I will eat cooked chicken or little meatballs I make from lean mince.

In general I don't like meat very much. Will eat it when visiting family or friends for dinner.

I never use sugar in tea or coffee and very seldom cake, but once or twice a year I crave dark chocolate and make a pig of myself by eating a whole 200g block until the lasr crumb is gone.

Lots of nuts and fresh fruit. Especially cherries.

I used to be 16 stone. Have no idea how much that is in Kg, but I was fat then.
