minced meat recipes,of any kind!

i realize that y'all call ground beef, minced beeef, generally. but what's the fat ratio normally,for beef,since this came up in a different thread? 

and do you eat /cook with OTHER minced./ground meats? 

you know,like pork,or chicken? 

or things like crab?

i'm always up for new recipes,please! 🙂

I've never had grits. I have never been to any of the Southern States. I don't think that I would like grits. Simply because I don't like the texture of mushy foods. I don't eat oatmeal, or yogurt for that reason. 

I've tried Haggis though. Most Americans have never tried that dish.

wow! what a HUGE difference in the fat levels! like boris,i generally buy ground beef that has 73/27% ratio,because of the price,and because of the flavor the fat adds,like boris said. 

but i cook it in a very heart healthy manner,as curtis has a pacemaker,and takes HBP meds. for sauces or meatballs(rissoles,and thank you for explaining that,i've been meaning to ask,jean!),i braise the meat or meatballs in heavily seasoned water for at least an hour to draw the fat out,since that pulls a great deal more fat than the traditional frying method. but i can see that you COULD use the frying method with the low level of fat.

i DO fry turkey or chicken meatballs,but not pork or beef. as for patties,i do buy very low fat beef for those,it's a 95/5 blend. 

DH won't eat chicken or turkey patties,unless i smother them in some kind of sauce,but he WILL eat "white" chili,and marinara with any kind of ground meat(shhh...i don't always TELL him it's not beef!)

ten,tcm and jean,thank you for the recipes,and to all of you,i would be thrilled to get any recipe you're willing to share! 

and ten,that website is EXCELLENT! i bookmarked it! 

tcm,we are getting a costco sometime next year(FINALLY!),so i will make a note of that. my friend katie will be happy about the smaller packaging,as she won't have to spend so much time creating small portions to freeze.

oh! and i do make moussaka for him with lamb,occasionally,he loves greek food.all the greek food here uses pork,the northern style,he isn't too fond of that.

tcm and jean,i make grits with cheese in them,chill them and make  small patties. then i coat them in flour and fry them ,and we generally dip them in some sort of sauce,depending on the entree(for the americans,it's like flat hushpuppies,lol!).

so,a recipe from me. i don't have a name for this,but i created it at work and the staff loved it, so i made it for all the parties. 

it's a beef pate sort of thing,like meatloaf,but no tomatoes.sorry,i use american measurements,okay?

 

2 pounds of 95/5 ground beef

1 pound of 80/20 ground pork

2 eggs,beaten

1&1/2 cups of crushed butter crackers(ritz,or club,doesn't really matter,just needs to be butter crackers)

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon white pepper

1 teaspoon black pepper

1 &1/2 cups of beef demiglace,or the same amount of really thick beef gravy

 

mix all this up thoroughly,put it in a glass baking pan(metal will burn it!)13"x9",and form it into a square that leaves about an an inch around the edge open. this is so you can drain off the fat easier,and so it won't stick.

cover with tinfoil and bake at 325 (300,if you have a convection oven)for an hour. then drain out the fat,and bake uncovered for about 45 minutes,just until you get a slight crust on it.

 serve with whatever trips your trigger,as long as there's gravy,lol! i usually serve this with mashed potatoes or egg noodles.

the leftovers( if you have any) slice up really well after chilling,makes great sandwiches,hot or cold!

I frequently make a "Border Bake", where I brown a pound of ground turkey, pour off the fat, saute a chopped up red onion, then add 2 cans of chili, one can of black beans, one can of Ro-Tel diced tomatoes in lime, stir in a package of taco mix, simmer for 5 minutes, then pour into a 8x8 deep dish, top with corn bread mix, and bake at 375 for 22 minutes..........

 

One can substitute ground beef for the turkey.

 

Oh, and I sometimes make shepherd's pie using ground beef or turkey in lieu of lamb.

That is very similar to my meatloaf recipe. I use panko crumbs instead of the crackers. I use ketchup with Balsamic vinegar for the topping. I even put it in a pan with room around the sides, just like you do. I don't wrap mine up though. I just cook it at 350 for an hour and 20 minutes.

band,do you use jiffy cornbread mix? this sounds like a great recipe,i think he'd eat it! 

i make an odd sort of sheperd's pie,i use chopped up  roasted stew beef instead of lamb or ground beef. or leftover roast beef or pot roast.  do you put gravy in the meat for yours? i do,and my MIL thought that was strange until she tasted it.

and what veggie do you use? i generally use corn,but sometimes i use succotash.

i am NOT a ketchup fan,nor is curtis,and we had maintenance people who were allergic to it,hence this recipe. do you butter the panko crumbs at all? or pretoast them? i love panko crumbs!

I use peas, or peas/carrots/corn, in my shepherds pie. I use gravy, or condensed cream of mushroom soup in the meat, after I brown it. My older son says that there is no nutritional value in corn, so I'm using less of that lately. 

 

No I don't butter, or brown the crumbs in the meatloaf. The balsamic changes the ketchup taste quite a bit. My younger son slathers HP sauce over everything I cook. We buy it at the Indian Markets..... They carry a lot of British foods. 

 

If I make mashed potatoes, I generally make gravy to go with it. That works on the Shep pie too.

i've heard that about corn too,but curtis's heart doc wants him to eat corn for the fiber benefits,since he likes it. and doesn't eat enough fiber,in general. same for iceberg lettuce,useless for nutrition,but lo-cal, and great fiber!

If he is on heart meds, he should not eat dark leafy lettuce anyway. The iceberg doesn't have the vitamin K that clots the blood. That is a good thing.
