I'm not sure I really "get" this game, but I'm willing to have a stab at it.
Do you mean that I take the word "today" from your post, and then write a word starting with "y" (similar to the "Last 2 letters" game - but making sure that the word has at least 4 letters), but then use that word in a sentence...?
Yoghurt: I have only one pot of Jalna strawberry yoghurt left in the fridge and it's just NOT ENOUGH.

Maybe it was a coincidence that the Countess chose the last word in the OP's sentence... However, it must be a word starting with the last letter of the word they choose (whatever word they choose) in the sentence of the person who writes the post just before theirs...
Yes, I think it was definitely a coincidence...
