I had an account linked to an email address 

The account has been cancelled but it had eBay plus on it, now the subscription is due and I don't know how to cancel it

If the email account was cancelled, you would have needed to add a current email account to your eBay account.

As far as I'm aware, if you have access to the eBay account, THAT is where you cancel Plus. Nothing to do with an email account.
