Is there a setting on International sale so postage doesn’t default to International Economy?

I am a seller and I recently sold an item as a Buy it Now to an overseas buyer New Zealand), and eBay defaults the shipping to International Economy Air which can take between 10 & 21 days.  My buyer, before buying, contacted me to find out if I would send to NZ.  I sent her a quote for Standard Shipping, which was a bit dearer, but would get to the buyer quicker.  She was prepared to pay that.  I wasn’t sure how to change it, so she agreed she’d pay the extra if needed.  I told her that eBay won’t allow it.  Anyway, she paid and it was International Economy.

‘’is there a setting on default international shipping?  I have my own policies setup….is there a way I need to do it there?  If so, does anybody know how I create the shipping options so this doesn’t happen again.  It’s happened in the past that I create the international shipping label and I’m always out of pocket by a few bucks.

Can anybody assist?

Thank you.

I suspect that would be the option to not use eBay to calculate postage.

I have occasionally sold to NZ. I simply get the buyer to agree to the postage and Robert's your mother's brother.
