We are receiving many replies from buyers stating that items have not arrived on the dates as specified by Ebay on the order. How can I stop the message from Ebay specifying a delivery date once order has been placed as the Aust Post service seems to be always slow with deliveries

You can't and the eBay estimates are just that. Only estimates.
Unfortunately buyers don't understand that.
But what you can do is to increase your handling time in the listings, that will increase the estimates.
Several sellers on the discussion boards have done so and found it hasn't affected their sales.
And yes, many reports of slow deliveries by AP.
