The seller has to list the item as a Private Listing....then the item title and price will not show in feedback.
As a seller you cannot make your feedback private. It can be private while you are not selling but you cannot list with private feedback.
If you want to make you bidding anonymous you don't need to do anything. Ebay makes all bidders anonymous by showing them as a***b etc. Only you and the seller see your full ID.....you can check this for yourself by logging out and looking at an item you have bid on.
