I have had this happen a few times, and so far so good, as it it was just a matter of the buyer being a little indecisive at the time, but all went without a hitch.
To answer the question, though, yes, as regardless of the transaction status on ebay, the PayPal payment still has buyer protection, and credit card chargebacks are also a possibility (if the payment was funded by a CC, anyway, which you generally can't ascertain).
If the purchase is disputed, it can only be for item not received or item not as described - having proof of postage will protect you against a PayPal claim for not received, proof of delivery will be required if an ebay request is opened instead, so sending with tracking and obtaining something that shows the delivery address as well will put you in the best position to guard against that - the proof of post would also be needed if a chargeback occurs instead (where the bank attampts to reverse the payment, rather than through any dispute process the buyer can use).
If a not as described dispute is opened, it's a lot more difficult to defend (especially on eBay), but if you retain good, clear images of the item that's sent, particularly of any unique identifying details, you can ensure you've got enough evidence to supply to support your case, (if this does happen, it's probably easier to come back to the forum with more specific details to receive the most appropriate advice, but in any event, if a buyer is successful with a not as described dispute, they must return the item to you in order to receive a refund).

No, that won't (or shouldn't) happen, or at least never has in my experience.
If a buyer has paid for an item via PayPal and then a cancellation is processed, eBay instructs PayPal to refund automatically, but as far as I know it doesn't happen if they pay after a cancellation has been initiated or processed.

We had one of these a while back and I called ebay about it.
They told me to mail out the item as usual and that no refund would be issued against the cancellation.
We did what they advised and so far (couple of months at least) no refund has been issued.
But the last time I looked at the transaction the status still said it was open. So it looks like it will never close.
