For the purposes of pricing collectables, is there any way
of determining how long an item was listed before it sold?
e.g. If it sold the same day - it was undervalued
and if it had been there quite some time (re-listed)
it was over priced
Yeah, yeah, I know - I'm not a very good stawka

When you look at a seller's completed listings, change the sort order to Date listed: oldest first, and it will show both the date and time the listing was created.

Don't they show what time they started or only an ending time?
I know there have been times I have only discovered an item because
I searched completed listings, otherwise I wouldn't have known. Those
times the item probably had a fixed price/BIN and sold in the flashest
of flashes! (I was rather disappointed too, it was a collectable and went
darned cheaply lol)

They only say 'This listing has ended' and when you go into the
listing it gives you the date it ended. Nothing else
Can't find a way to find out how long they were up. Grrrrr
If I put them in my watch list and make a note - that's fine.
But I can't put everything in there.
