Ebay automatically re-listed my item. I don't want that because I'll be away and unable to answer any question or post the item.

. How can I remove the listing or change the re-listing date?l

you can 'end item' or revise: dropdown menu under 'more actions'

To prevent it happening in the future you have to uncheck the automatic relist option
