How do I change my banks details that buyers see on checkout?

Do you have Business Policies?

If you do, in your My eBay under the Account tab, click on Business Policies > Payment > Change you bank account data

If you don't, you can update the bank details through Bulk Edit.

In your Active Listings section tick the box at the top left to select All, click Edit. When the Bulk Editor opens up tick the box to select All again, select Edit fields > Payment
