Do you mean the payment methods you offer buyers? If so then you must offer at least one of the safe payment options which are Paypal, Paymate or credit card through a merchant credit facility.
If you mean your preferred ayment method for paying your fees click on the account tab in my ebay and the option to choose your automatic payment method is about half way down the page.
