I’ve always just picked Australia Post International Parcel and eBay has determined the cost dependant on where the buyer lives. Now, the only option is for me to determine the cost. How can I do that when I don’t know which country the buyer will be in who buys it? Ridiculous.

It seems - fixed price postage - is the way to go - and that should be able to be determined in your choices.
From experience - prior to Covid - I was able to send - as large letters - containing items - not documents - for $3.50 - in a padded envelope - Standard Airmail.
Due to Covid - the Economy flights which usually carried mail - are no longer - all items - not documents are to be sent as Parcels - ie - from $21 & up.
Fix your postage - at what it costs - with packaging - keeping in mind - eBay takes 10%.
Also keep in mind the cost is more to Europe - than the US

I dont know what your query is: I see your listings are for calculated postage, international standard, which is correct for this pandemic time.
