So I didn’t sell for maybe a month after selling daily for a month and a half, after selling again a few payments came through to me instantly although now, every single payment shows that it’s available within 24 hours of delivery, I post my items untracked so how do I get my money?! I’m worried buyers can now scam me as it has happened before to me, please help.

There is an estimated delivery date, and I think that is what eBay go by on untracked items. I wouldn't worry about being scammed as I find most buyers to be honest and most would not make up a lie to say they didn't receive the item. I sold many things untracked in the past without any problems. However, there is no guarantee you won't come across a scammer at some time even with tracked items. As for your money on hold, I would think because you have less than 100% feedback and a low number of feedbacks overall (79)

You might be now categorised as a new seller by ebay:
New sellers typically experience holds for up to 30 days, although sometimes it may be longer.

Buyers scamming you is the risk you take when you post things untracked (as you have experienced)
Possibly your hold are due to your low feedback and lack of tracking
I don't know
Other members can't stop buyers scamming you, or get eBay to change their mind on your holds

I was just curious if anyone knows the reason as to why I went from getting my funds as soon as someone purchases to now on hold until delivery for over 50 items

They were implying that I wanted anyone to stop buyers from scamming me or for eBay to change their mind, that was not my case I simply wanted to know why my payments are going on hold again all of a sudden.

I was wondering if anyone knows why all my payments are now going back on hold and this time until 24 hours of delivery, I’ve been selling for a while and I completed all the sales and funds necessary at the beginning to stop the new seller blocks, now I stopped selling for a month could this be the reason?
although sales after the break were still going through instantly up until a few days ago.

I was going to suggest you contact eBay and ask them for their (scripted reason), you will be told they will look into it and a rep will get back to you in 24-48 hours) which is what everyone is told
Your payments being on hold is not going to increase any scammers you may get, unless a scammer is reading the forum (very possible, since it is a public forum, which can be read by anyone in the general public) they had no way of knowing how long your funds were on hold for
