A buyer purchased an item and chose pickup and paid.
They now want it posted and prepared to pay postage costs.
How can I add postage when an item has been paid for?

You can't. You could set up a listing for postage only, taking into account the additional flagfall and fees that would incur.
Personally, I would cancel using 'problem with buyer's address', then block them.
These types of buyers faller into the 80/20 rule - in this case 80% of problems will come from 20% of customers, which they probably are.

Hi,
Not sure if they are genuine or not as the item has been paid for and they are happy to pay the postage.
If I can't add postage cost, guess I'm screwed as I can't contact eBay to talk to someone any more.

If you prefer an eBay answer, there is no reason you cannot contact them. eBay help is at the top of every page. You will get the same scripted response from either human or bot there

No it is okay - use the advice already given
Make a special listing - call it "special listing for xxx(buyers id)"
in description say postage only for item already purchased, or something like that
put in the postage amount as the buy it now price -
Your buyer will be happy

in instances where a buyer has wanted a postage upgrade after placing the order I simply ask them to buy an item for a value equal to the postage upgrade, with full understanding that the transaction is only to facilitate the collection of the money and the item will NOT be shipped. Then manually adjust the inventory back up and you're done

Very fraught.
There is no way to know whether the buyer will put in an INR claim after they receive the original item.
Cancel and relist, or cancel is, imo, the right way to go.

I'm fortunate. I can trust my customers. 80% of my daily customers are regulars and the community of buyers is tight and. I've only had one genuine scammer in several years and never had an issue using the above method. You communicate via Ebay and you have them acknowledge that the new purchase is just for the purposes of collecting the cost of the postage upgrade and the item will not be sent, I think you're covered.
