Um, why can't I list variations? Anyone else struggling?

Hi all...

Quite new at selling, and sat down tonight to have a crack at doing a variation listing... got my little youtube video helper I googled, and then, get in to sell my item, and there is no option for a variation listing?

Have I done something that I can fix, coz the other day, it was absolutely there as I had a play around and had no idea what I was doing!

Help please

Not all categories have variations available.

Could that be it?
