Today I went into a previous listed item and updated the price. When I went to save a pop up came up “your postage options have been updated”. When I checked the worldwide option had been de-selected now. When I toggle it on it won’t save the worldwide option and only saves domestic postage. I have sold 4 items with worldwide before and there’s been no issues with buyers. I’m not sure how to get the worldwide option to save. I have updated the app, re-started the app and tried the Australian eBay website. whilst I can select worldwide upon saving it goes back to domestic. I also tried delisting but again the worldwide option wont save. What’s going on? How do I get the worldwide option to save?

All four of your items show as posting worldwide BUT with so many scammers these days, don't post anything for more than you can afford to lose.
You're an inexperienced seller and all an overseas scammer has to do is file an 'item not as described' claim and you'll lose the item and your money.
My recommendation would be to limit your more expensive items to domestic postage only.
