How do I document that the courier has collected on behalf of buyer if the courier does not have the buyers code ?

What did you get from the courier?

I would ring the courier company if you remember the name, and ask for confirmation of collection.
did you organise the courier or did the buyer organise it?

Do you have security cameras that you could take a still from and keep as evidence of pick up?

As you are aware, if the buyer arranges a courier pickup, the item is not covered under the MBG.
Personally, I would have obtained the relevant details (con. note, tracking number, pickup code, etc.) before handing over the goods... but as you didn't and the buyer isn't covered for an item not received, I wouldn't lose any sleep over it.

How does this seller prove the item was picked up by a Courier. ??

Really?
The communications between the buyer and seller would be sufficient for eBay to determine the buyer organised their own courier.
It would take 2 seconds for an agent to look at those messages. Any request would be found in the seller's favour, and the buyer would get slapped for breaching the Abusive buyer policy - specifically, making false claims.

The communications are just that - messages.
The question would remain - did the buyer actually organise a courier - the seller has no proof the item was collected.
And - we all know how eBay favours the buyer.
Over to the defense. ๐คฃ
