I am trying to list an item for sale and have completed the process to the stage where I am asked to verify my phone number so that a code can be sent by the system. However, the system continues to tell me that the information is incorrect?! "Something went wrong. Verify everything below is correct"

Are you entering the country code? For example, +61411987654 instead of 0411 987 654...?
It may also be a glitch. eBay users have been posting on these boards during the last week (and more) about glitches involving ability to give feedback, to select correct postage amount, and so on. It isn't beyond the realms of possibility that one of these glitches involves being able to verify your phone number.
I'm hesitant to suggest trying again tomorrow, as Friday is actually known as THE eBay glitch day. (IT seems to muck about testing things and "fixing" what isn't broken on Fridays.
However... before you even think about selling on eBay, please - I really urge you to read about Managed Payments and the types of verification you must complete, plus the 21-day hold for new sellers even if they have managed to verify both their ID and their bank account.
