Sunday September will be 19th, not 20th. Very confusing and I am not sure what day I am scheduling here.

If you want it scheduled for the 19th, choose that. It's not hard.
None of us can change eBay's calendar.
I schedule all my listings. I use dates, not day of the week, and they list on the chosen date. Don't sweat the small stuff.
