I ordered an item within my country, shipping was said to be around a week and twelve buisness days in some circumstances.
Today makes it 15 week days, how long should I leave it, the seller simply confirmed the shipping when asked where the item was however there is no tracking number.

I usually allow 12 days domestic before I open a dispute, if the seller does not provide valid tracking then I escalate to a claim in a couple of days. You have to escalate within 20 days of opening the dispute.

For domestic post, no matter where you are in Australia I think waiting 15 business days from the day it has been sent to receive your item is ample.
I personally would esclate to a claim.

have you check at your Post Office?
a great number of 'item not received' disputes are actually parcels / satchels sitting on a shelf in the back room of the local PO because the postie forgot to pop a card in your letterbox.
depending from and to where actually in Aust. as to the delivery, so if its coming from Perth to outback FNQld it is going to take more than 12 days!

Thanks for all your input, after sending the seller another message and not recieving a reply I changed it to a claim today.
