do a regular search for the saddle type you are after. Include search norrowing features like "Australia only" and "ending soonest" etc.
When you have completed the search and have it the way you want it you simply hit the "Save search" link across the header bar of the search. Make sure the box for receive emails has a tick in it and press Save. When an item is listed that matches your search criteria you will receive an email from eBay to the email address that is attached to your eBay account.

You can also add the item by name or whatever by typing it into "my interests" on the LHS of the ebay title page. Mine has that feature & every time I go to the front page I see listings of items that match my usual search, so I can quickly see anything new. No emails clogging up my inbox!

My only saved seach within the "my interests" is a very specific area of collectables by only one maker, so I typed that name into the info field for interests. It works for me, as it filters out all similar items by makers other than the one I specified. It's also not a thing that would normally suffer from keyword spamming.
When I go to the ebay home page I get pics & a list of items which is fairly accurate to my wants.
I'd probably not use the feature for clothing or general items (though the interest field can be deleted &/or changed) I only use it for a very specific type of item, so I thought the idea would work for the OP with a specific brand of saddle. As a for instance Wintec Dressage Saddle, rather than just dressage saddle. You have to be very specific for the search to work in your favour!

No worries! The only problem is the temptation to purchase - as the items usually aren't cheap, & mostly found in Europe!
