It is not Ebay's responsibility to follow this up - what exactly are they going to do?
They will only get involved if you have opened a case and if there are issues in resolving it.
There are lots of delays with Aus Post - what was the estimated delivery date on the purchase? It's only been about 10 business days, so hardly a massive amount of time since you placed the order.
What is the item number and/or where is the seller REGISTERED?

You do not mention contacting the seller? have you done this?
That would be you first port of call, not eBay who do not sell anything and who are not going to contact the seller for you
Did you select your own address for delivery or did you select Click & collect?
It is not good posting here you want a refund, you need to follow the correct procedure to get one
You cannot contact eBay by phone, the call center has been closed for over a year due to Covid and emails are bot automated as they always have been

You have the tracking details, contact australia post, or who ever is the carrier.

How long has it being at the South Yarra Hub, is this the exact wording, is it it a delivery centre, in which case it could be out for delivery in the next day or 2. More detail would help, or contact Australia Post, or is it a courier company in which case it could be a drop off point.

I do agree with asking whether the buyer has even contacted the seller and a lot will depend on the delivery date given at the time of purchase.
I know that when I send my stuff from Perth over to the east coast, it's taking at least 10 business days at the moment.

Writing here won't achieve a thing, it is just a discussion board for members of the public.
Sending an email to ebay won't fix it either.
Here's what to do.
Look at the original ad. Check out the expected delivery date range. If the date is still within that range, do nothing.
If the delivery time has come and gone, you will need to open a proper ebay claim for item not received but since you have received notification the pillow is already at a hub, maybe you could hold off on doing this for a week or so, to give it time to arrive.
You need to open an official ebay claim though within 30 days of the expected arrival date of the item so keep an eye out and open within plenty of time to qualify (if pillow has not arrived.)
Go have a read up of the terms and conditions. You'll find some articles at ebay help section. If you're on a computer, it is along the top right hand side.

Before I say anything else, I have to grin at the (inadvertent?) pun. Not impressed with a memory foam cushion? Well, at least it's a laugh in these grim times...
The other responders on this thread have explained what you need to do. Follow the advice about looking at the EDD or ADD (Estimated Delivery Date or Actual Delivery Date)... and is the deliverer Australia Post, or is it a courier? If AP, then you can try calling them for an update and explanation - but given the just-announced hiatus on pickups and deliveries for four days, clearly AP are well and truly stretched too tightly at the moment. If you get through to AP, bear that in mind...
Familiarise yourself with the steps and timeframes of eBay's Money Back Guarantee.
Take a look through the eBay Money Back Guarantee policy help page; it clearly sets out the terms and conditions, including timeframes.
On that page, scroll down to the sub-heading that is marked
When the buyer doesn't receive an item
❝If the item doesn't arrive at the address provided by the buyer at checkout or isn't made available for collection, the buyer is entitled to a full refund, including original postage costs (if applicable).❞
The actions and timeframes (quick link straight to that) for INR (Item Not Received) are set in stone. You don't get any leeway with the timeframe. But don't pre-emptively open a case before the EDD has passed; that would not help you.
In this case, given that we are in the middle of Delta outbreaks that are spreading faster than we can test, trace, contact and isolate... I can only say that all of us are going to have to be patient. Everything is not all right, and we cannot expect it to be, given the case numbers and the numbers of essential people furloughed because of being close contacts.
