Many times I have bought things and noticed that the "PAID" date is often wrong (usually marked as one day before being posted) and usually several days after it was ACTUALLY paid and easily verified by my records. Also, POSTED dates are often wrong. Is it possible for Sellers to manipulate these dates?

I also don't know what unmarking as 'paid' & remarking it does as regards showing the date paid. It may happen that there are times when sellers mark & unmark 'paid', and vice versa in their drop down menu, but it wouldn't be a very frequent occurrence at all, quite the opposite. And certainly not as frequent as the OP suggested it is for her....

Given the OP states the date appears "marked as one day before being posted and usually several days after it was ACTUALLY paid" my moneys still on it being an unverified Paypal account & thus eCheque's.
Also, if it were the seller doing it, it would still initially appear as marked when OP pays (which is automatic)... it would then have to disappear & reappear later (if the seller had then manually unmarked it and then marked it later).

Seems the OP has done the disappearing act. Probably didn't like hearing everyones views on the matter.
As a buyer, I'm not sure I've ever checked those things. I pay, the seller sends, I get what I've bought, everyone's happy.

I don't know about other sellers, I just mark as posted after the item has been taken to the Post Office.

If I print a label on Saturday, it will show that date as shipping info received by AP and after I have lodged the parcel on Monday, it will show received by AP on Mon's date (actually posted then).

I paid for some minerals I bought from China today and just received notification that they have been posted.....even though it's Saturday night.
When I looked at the order details, under shipping info it says "Shipping Info Received" which says to me that China Post has received the info, but it has not been handed over the counter yet. The bar along the top also only has Postage Info Received ticked.
Obviously it hasn't been posted yet. I would expect the shipping details to change once it's been handed over the counter and scanned.
Another shipment that I paid for 3 weeks ago has both the Postage Info Received and the In Transit box ticked. It also shows the actual posting date (when it was scanned) as being 2 days after it was marked as posted (I paid on a weekend).
I wonder if the OP's info in the transaction details page marries up with the tracking on the AP site? Could they be getting confused with shipping info received and the actual shipping date? If there is one particular item in question, or a particular period in time, could the OP live in a state that didn't have a public holiday at the start of the month and bought and paid for something from a state that did? Which would mean the item may have been scanned 4 days after it was actually marked as posted through eBay labelling or C&S?
Just throwing out scenarios that might explain discrepancies.
