I buy an item - pay immediately, but the seller takes 4 or 5 days to mail it. If they are not doing same day despatch they should indicate this on their site and I would then not buy. They demand payment within 3 days, we should demand despatch within the same time frame. EBay should have some sort of policy on this. When I buy ex East can take up to 10 working days to get here. Add a further 4 or 5 days before the item gets mailed, then this can mean it can take 3 weeks to get to WA.

I can understand how frustrating & annoying this would be particularly as you are buying from within your own country!
I dont know what the price point is of the items you are purchasing but I have quite a few buyers from WA. I use express post and amazingly it has only been taking 2 days to get to them, QLD to WA. It might be worth asking & paying for express post if you are in a hurry for something or for more valuable purchases.
However personally I cant undertsand why it would take 4 days to simply post an item.

They do.
You can't list an item without stating a handling time, which can be anything from same-day to 30 days. Handling time is also generally reflected in the estimated arrival date, even though they are eBay's estimations and often bear little relevance to actual time it takes Australia Post to deliver items (particularly to WA), however you can usually tell by the ETA what kind of handling time the seller has selected.
If the sellers are posting within their stated handling time, then whilst I can understand that slower postage time can cause some frustration, the seller isn't doing anything wrong and there's really nothing to complain about. If they are posting outside of their stated handling time, well then there is something to complain about.

On the item's listing, where it says postage, click on see details, will take you to a screen, and under Domestic Handling Time will be displayed the time the seller has nominated.

Most sellers post on a particular day say for instance you paid on a Monday but the seller posts on a Friday so if you can't stand waiting that long then you need to ask the seller before you pay or purchase an item when they will be posting and not complain after you have paid

Not all sellers are just selling stuff from home that they no longer need, more and more businesses and stores are opening up and a lot of these places are high volume and simply can't post things the day after payment

Am currently waiting for an item where the buyer still hadn't posted a week later. Sent them a message asking when they think it would be here by and they said they had only just posted it as payment had only just cleared (paid via paypal immediately after action ended). They said they were waiting for it to clear their account. I said I was confused as I had paid and paypal said payment had been made straight away. They said No- I mean my bank account. Why? You waited a week for it to go from your paypal account out to your bank account to post it to me? They said yes and then it gives them 3 days (their stated handling time) to post it from when it has cleared into their bank.
I said that handling time of 3 days is when it gets cleared into the payment account of choice (paypal in my case) it should have been sent within 3 days and got here under Ebays estimated time. It still isn't here and I paid for it 2 weeks ago. Argh, I know what you mean, I post all of mine the next day or same day if received before the PO closes.

Wait until you get it. When you leave feedback let the one star for postage time reflect your opinion.
Payment to Paypal is cleared payment. Btw anytime I withdraw funds from Paypal it is unusual for it not to be in my bank account the next day. Even if I do the transfer late in the evening.

Are you kidding Dave? I don't receive it for 3 days at the least,so is there a Bank that PayPal prefer to transfer money into in a day?

That's the problem as many sellers wait until they receive payment into their bank accounts before they post an item which then takes around 6 days before they send it.They should send within 3 days when it's in their PayPal account
