Any bright and wonderful ideas for a Christmas spread that does NOT involve HOT stoves and indoors.
Got the usual idea's - seafood, cold cuts, salads, I know, in a word..... boring.....any Qlder's out there that know how to make this
day awesome without melting....

Air Con, Mediocre Food, Everyone Else, Small Kiddywinks etc.
Kidding - have had a couple of good one's in Bali with my brother ( lived there for 12 years).
Lots of lovely Asian style salads ( some hot some cold ) - bit out of the norm.

These smoked salmon/avo salsa and prawn stacks are yummy.
We often have them as a starter/entree at Christmas cos they are a bit special.
Garnish it with dill, seems to be missing from this recipe.

My favourite for a hot Xmas is Pork in aspic or Brawn, (you can get it from a good Deli) no neeed to cook it yourself. ( if you want to cook it, there are some great recipes on the internet.) Some sliced ham and perhaps some cold, roast chicken.
A nice continental potato salad and a tossed salad that I keep in the fridge without the dressing until the food is served.
For my tossed salad I walk along the Vegetable isles and grab whatever I see suitable to use. Mixed green leaves, Tomatoes, Cucumber, Carrot for grating, Cellery, Capsicums, Mushrooms and red and Spring onions.
Hard boiled eggs with or without the yolk mashed and garnished, to add on top of the salad.
As nibbles I like to make tiny sandwiches. Any filling, the sandwich quartered and each quarter halved again. Cellery sticks cut into 4cm length, filled with cream cheese that has black pepper and chopped chives added. The same filling can go into stoneless dried prunes. Some Kabana pieces and cheese cubes will fill a platter.
The only thing I have to cook are the eggs and the potatoes for the salad. All done the day before, keept cool and fresh in the fridge until time to entertain.
Well, that is my escape from cooking on a hot, but festive day.

Queensland hasn't stopped us from enjoying our traditional Christmas fare.
We do it all in the BBQ (except for the peas/beans) - it's how we cook ALL our roasts through-out the year!
Roast
Turkey
Chicken
Glazed Ham / pineapple
Roast Veggies
Rich Gravy
Cranberry Sauce
We then serve and eat in beautiful air-conditioned comfort.
Plum pudding is inside job.
