I know this isn't what you are asking lurker, but I would try and encourage her to cook as she did when her hubby was alive. I have days when I will cook all day, I make a baking dish of lasagna and freeze it into meal sizes for lazy days, I do rissoles, I even to roast dinner's and freeze them, I do apricot chicken and rice, slow cooker meals, all handy for those can't be bothered days.
