Fancy a bit of cake and don't want to wait an hour?

 

 

Make a cake in a mug - from scratch - in 5 minutes.      9 different recipes................

 

Just a mug and a microwave, no cleanup

That sounds great, Stawka, but there is no recipe how to make a cake in a mug.

Mug cakes with eggs can be well, a big eggy. A lot of normal sized cake recipes only call for 1 egg so when you put that much egg in something 1/4 of the size, it often yields less than favourable results.

 

I've tried quite a few different ones and this recipe works! You can put it into a mug, but sometimes the bottom isn't quite done, which can be fixed by popping it back in for about 10 seconds. Or, you can just do what I do and leave it in the medium plastic mixing bowl I mix it up in! Not as attractive if you're entertaining guests, but if you're making one for a midnight snack, it's quite OK. It also allows a larger surface area so you can put more cream or whatever you like on top.

 

Chocolate Mug Cake

 

1/4 cup self raising flour

2 tblsp cocoa

2-3 tblsp sugar (depends on your taste)

1/8 tsp salt

1/4 cup + 1 tblsp milk

2 tblsp vegetable oil

 

Mix dry ingredients well, squishing out any lumps.

Mix in wet ingredients well

Put into coffee cup

Cook in microwave for 70-80 seconds

or

leave in mixing bowl and cook for 80-90 seconds. Watch it and remove as soon as the centre has dried.

If you can wait, let sit for a minute, then dig in and enjoy while hot!

 

It's very easy to overcook these cakes, so definitely keep a close eye on it when cooking. Plus it's fun to watch it rise so quickly!

Thank you, Stawka.

I will try some and post the results here. I am not a great cake lover, but hubby has a sweet tooth. Normal size cakes are to big for just one person, so this may be a solution for my sweet man.

Erica,  I reckon 1 egg for just one mug is too much egg.

 

I was gunna mix an egg and make 2 mug cakes with it - there's 2 of us

Or you could try my recipe that has no eggs and no butter! In fact, I'm a bit peckish, I may have to go and whip one up right now. Yes, I'll do that.

You can buy them in the supermarkets now called "Cake in a Cup". Tasty too. Just add milk.
