I've been reading, and watching shows about food around the world, it's diversity and its similarities. And with Christmas coming, I thought I'd ask what your favorite special to the holidays dish is?
One of mine is Whoopee pies, one of my DILs is from Pennsylvania Dutch country and she makes them for us only at Christmas. They are so goood!

Caster Sugar is the very finely ground - the one before icing sugar - maybe you call - icing sugar powdered sugar.
Caster Sugar is finer than that you add to coffee.
Couverture chocolate is a very high-quality chocolate that contains a higher percentage of cocoa butter (32–39%) than baking or eating chocolate. This additional cocoa butter, combined with proper tempering, gives the chocolate more sheen, a firmer "snap" when broken, and a creamy mellow flavor.

You can make your own caster sugar.
Just pop normal (granulated) sugar in a blender or whatever and blitz till it is very fine but not powdery.

My son showed me a cake tin he and his wife bought. Then he showed me a photo of the practice run cake they made in it.
It was a gingerbread house but made with gingerbread cake recipe. No construction required. They just sieved a bit of icing sugar over the top. I was really impressed. I am wondering if they will be making one for Christmas.
PS That's not their cake but it is the tin. Found the pic online. I was keen to see if 'copy picture' then paste would work on this forum. Seems to.

Found it! But it seems to be out of stock in Australia. Can get it from England or USA, but very very expensive what with the dollar/pound exchange and the shipping cost is astronomical....
Never mind, it might turn up again next year ...

Checking around - found this - Cakes Around Town - they are in Queensland.
$19.95 - Silicone Molds - can be used for baking.
