You must've cooked a huge amount of boiled sweet potato for it to have lasted a week. I've never even heard of boiling it, actually.

I've been buying frozen roast potato pieces and frozen pumpkin chunks, so I thought I'd try an experiment. I bought some sweet potato, cut it in chunks, blanched it in the microwave and froze it. I'll be trying some roasted with the pork we're hving tonight, so I'll let you know how i tworks out.

I figured potato salad spends at least a week between being processed and being eaten at home.
If it is just plain sweet potato it should last a few weeks in the fridge in a sealed container.

I like sweet poato-but when i put it in with the roast-
it sticks to the pan like -baby pooh on a blanket.....................Richo.
