If someone wants to charge $100 a plate, and someone else wants to pay that..whatever.

I dont think its particularly pretentious...but it better be excellent..

Re what a plate of food looks like- that expression 'you eat with your eyes' comes to mind..*

If it looks like slop, it often tastes like it too..but meat and 3 vege, or pasta or stew can look appealing- its a tiny bit of effort, thats all.

and, I find it a bit ironic that Miles cooked a beautiful tasting and looking plate of Japanese inspired food(the other night) and yet cant seem to present other food in a beautiful way..its as if he disconnects the process between ingredients/ cooking/ plating..I want him to do well though!- I find myself thinking 'come on man! get your act together!!'

*If youve ever tried kaiseki, its an experience for all the senses.

I keep egging Miles on too. I don't know why, but right from the start I wanted him to do well. He just seems like a genuine down to earth bloke, with no airs and graces.

I think Mimi will be around for awhile. She seems to be come along in leaps and bounds. I didn't like Zoe at first, but I've warmed to her a bit more now.

I'd like to see Theresa or Cecilia go next.

Silly bluddy Harry. Shannon was telling him what to do and he was too busy playing with the forceps making sure everything was pretty. If he'd listened and put more ganache on, he probably would have won. Shannon said the ganache was absolutely beautiful yet he put so little of it on. I would have smothered it!

Namby pamby plates-worth!       2 spoonsful, tops, on that plate!

I didn't think it looked pretty at all.   Just messy.

Guess that's where the Eton Mess comes from, eh?

Silly Harry....should've gone seafood.

I'd like the recipe for those brookies though.

Wonder if it's on the website..........................................

I think he should have gone the seafood too because he knows how to cook it. I rather liked the look of those brookies too. I reckon they'd be yummo straight from the oven!

Cookies:

350g 70% dark chocolate

45g butter

225g caster sugar

80g cornflour

1 tsp baking powder

3 eggs

1 tsp vanilla essence

100g dark chocolate chips

Chantilly Cream:

200ml thickened cream

80g caster sugar

60ml Frangelico

Garnish:

extra dark chocolate, grated

Method

  1. Preheat oven to 180C.
  2. Place 70% chocolate and butter in a bowl and set over a saucepan of simmering water. Stir to melt and combine. Remove from heat and set aside to cool until needed.
  3. Combine remaining ingredients in the bowl of an electric mixer fitted with a paddle attachment and beat until light and fluffy. Add cooled chocolate butter mixture and mix until well combined
  4. Spoon tablespoons of mixture onto baking trays lined with baking paper. Dot the top of the cookies with the dark chocolate chips, pressing gently into the dough. Bake for 12-13 minutes in the preheated oven. Remove from oven and set aside to cool.
  5. Meanwhile, to make the Chantilly Cream, combine cream and sugar in bowl of electric mixer fitted with the whisk attachment and whisk until soft peaks form.
  6. Stir the Frangelico through the cream mixture.
  7. Serve Brookies topped with a little extra grated chocolate and a dollop of Chantilly Cream.

Is that Harry's recipe?   Thanks for that

If they only cook for 12-13 minutes,  what did he do for the rest of the time

to be running so behind with their cooking?

Really don't know about 3 eggs in a cookie mix though.  Went looking and I see

the recipe makes 50 brookies.    Get nice and fat from that lot

Might try it next weekend, lol

And I thought Chantilly Cream used icing sugar

Yeah, that was the recipe on the MC site under Harry's profile. I always thought Chantilly cream was just whipped cream with caster sugar and vanilla. No idea what frangelico is!

I suppose the cooking time is 12-13 minutes, but there was prep time as well. I might make some to take to work next time I work a weekend. Always looking for things where there is a reasonable quantity. That amount would be ideal. It would take me longer than half hour to make them though!

Interesting show tonight..

Waking me up to cook a blardy 'midnight feast' would get you a cold snarl and a hot grrr.

I was wondering how a person judges commercial brioche (you can buy it from c.oles) vs homemade waffles?..but meh maybe its just me...and anybody who has seen Nigella cook, or read her cookbooks, or even heard of her, knows she lurvesssssss the chocolate..bit of clever thinking on ol' Hs part methinks...

I liked the attitude of the pro chef- calm and self effacing..ought to be more of it- that sort of character uses his energy really well.. problem solving and with efficiency..

(and please, when will they realise that Shannon gives them excellent advice?- I was tsk tsking at H, when he wasnt listening)

(edited to add, I was also shaking my head at H not choosing seafood...wth?)

I think sometimes they want to try and show the judges that they can do other things than what they specialise in. Trouble is, when they do that, it's a time when they really should go with something they know, like a immunity or pressure test. I know it's easy for me to say, but in those 2 situations, I'd be going for something I know how to cook well and leaving the creativity and trying something different for other challenges.

Know what you mean tippy.

At those times, why not go with something youre confident with, and add a new technique- like beautiful plating, or smoking 1 element, its like some of them dont know how to play strategically..

I really was scratching my head about choosing pavlova..-seriously? Shannon was trying to encourage Harry to consider presenting it differently, it was only when the meringue didnt cook well (the main element of the pavlova!!) that Harry altered his position..If SB was giving me advice, I would drop everything to take it. Poor Harry, he looked gutted when he realised he wasnt going to win the pin.
