It's time for the outdated kitchen fluo to come down but I have no idea what type of lighting works best in a kitchen .... Any suggestions pls?

There are some here who can advise better (Martini?), but I would replace the fluoro with this kind, so that you can direct each light to a particular area.
There are some with four or more lamps.

I know that Bunnings have a good selection, some more pricey than others. They are really modern and classy IMO. That would be the easy way to go, the other way would be to have recessed lights in the ceiling which could be directed, but that would cost more.

Can you get recessed can lights? I have this type in my kitchen, and they work great.
This isn't my kitchen, but an example of what I'm talking about.

you should be able to get a rail light with movable heads to fit there just fine, and set close the ceiling as well.
you'll probably need small spotlight bulbs,i think.
