Does anyone know what plant this is please? the leaves are abt 5cm long and maybe 2cm wide, silver/green on one side, and purple on the other. I know it's fairly common but want to know its name and what sort of care it needs.

Not being PC...Yates Garden Guide calls it Dew.
Whatever you want to call it, you can't kill it. As I said at the start of this thread it thrives on a regular dose of weedkiller.
The only way I have ever seen it turn up it's toes is by letting it stand in water till it rots. A closed plastic bag just acts as a greenhouse, particularly if it gets exposed to the air every so often.
And yes, we all know how you feel about it.

I had some mild success with kettles of boilng water.
But there was so much of it, I couldn't walk back and forth that many times.
Trouble now, is, it's intertwined with my Canna Lilies, so no boiling water now.

If I recall correctly, I'm sure that Wandering plant originated from Mars as they fled to earth to escape the triffids ... the trouble really started when the triffids (like the Borg) also found their way to earth, assimilated the Wandering Jew plants and now they're hybrids; so now they are known as the Wandering Borg plants, able to exist in any environment with or without oxygen ...

Maybe get a small artist type paint brush and dip it in straight Glyphosate and then cut a few bits of the plant
and put the straight weedkiller directly on it).
I've never had anything grow back where I used the straight stuff.
The Glyphosate you buy from Safeway/Woolies is similar to Roundup but a lot cheaper and it does the same
job.
