baby is great in stir fry, Mr Boris won't eat the big stuff, no matter how much I wash it he says it tastes like dirt.

Silver beet does have the white stalks (and other colours - red, yellow) Poms like
to call it Chard or Swiss Chard.

If you want to make a healthy food into unhealthy food, trim the stalks
and batter them and then deep fry 'em! I'm told they're yummy.
But I won't eat them.
