Spoon Rests! What A Totally Superflous Kitchen Item!

I often see them in the op shops and think pffft, what a useless item. As if you couldn't use a saucer or whatever you have at hand while you're cooking. Making bolognese tonight I just rested the spoon on the side of the can.

I don't agree with your opinion there. The packets of rice sold today (good quality rice, depending on the type basmati, jasmine etc) still have instructions on the back to wash the rice first (to remove the starch).

I watched part of a youtube clip yesterday by a Japanese chef. He put water in the bowl with the uncooked rice then drained it off , then massaged the rice, then put more water, drain, massage the rice... I am not sure what he did next as the clip was 7mins long and I gave up watching it then. He saved the rinsing water for his mothers garden.

I did used to think it was only cheaper rice that needed rinsing because it may have impurities in it.

It is not necessary to wash or even rinse rice before cooking as it is not dirty as such. The hulled or brown rice grains may have some particles of loose rice bran or rice germ. The milled white rice may have minute particles of ground rice (rice flour but commonly thought of as starch) adhering to the grains and again this is not dirt.

The hulling and milling process removes the exterior of the rice grain and the rice is packed directly after this process rather than being packed straight from the paddock or garden for instance. Also a major part of the milling and hulling process in a mill is the aspiration system and this aids in the removal of loose particles of bran or rice flour prior to the rice (brown or white) being packed.

Rinsing (different to washing) rice is a matter of personal preference and also depends on the particular recipe or how the cooked rice to be used. Rinsing removes any loose rice flour that remains on the rice grain after it has been milled.

Fried or Steamed Rice – rinsing the white rice prior to cooking will result in the grains being more separate after cooking

Risotto Rice – Suggest that you do not rinse as the loose rice flour granules will help to create the creaminess that is characteristic of risotto

Rice Desserts – Suggest not rinsing as the loose rice flour particles adhering to the grains will aid in creating the creaminess that is expected of deserts such as baked rice pudding, rice cakes and creamed rice, etc.

 Martini, I do not put bleach down my sink, sineater does. You replied to me so just clarifying that 🙂

I was not pleased to think anyone here would be doing that, but doubted they would. Not in a home kitchen.

I rinse my rice, normal strainer.

Sineater then went on to clarify it was not pure bleach she put down the sink either, to be fair, but dilute.

Paper towels wouldn't be that effective would they? The liquid dripping of the spoon would soak into the towel through to the bench?
