I love raspberries.

 

My last trifle was made with raspberries and fresh berries but why are they so expensive at Christmas?

It's a bit like kiwifruit - last week 10 for $2.  About $2 each at Xmas.Smiley Frustrated

LOL!!!

When I make trifles I use the sponge fingers (savoiardi) to layer the dish. Then I add jelly (usually two packs) to soak into the sponge. At some stage I'll add fruit (might be in the jelly before it sets or on top of the set jelly). Then custard, then fresh whipped cream.

because they need heat to ripen,so they have to be greenhouse grown,or imported,in winter. it gets expensive! 🙂 

 

would you like my beloved MIL's raspberry cordial recipe?   wait...can i post alcohol recipes? i mean,how to make it? Smiley Frustrated

No sherry Katy, or port?

 

I do mine pretty much the same way.  The sponge which I prefer to be plain and not a jam one, slurp in some sherry, add a layer of berries or tinned peach slices, followed by jelly and then custard with fresh berries on the top just before serving.

 

I don't do a cream layer.

I like raspberries the best of all fruit. They are expensive most of the year here (NSW), occasionally on special.

Trifle without a cream layer sounds good.

LOL, Joono, I used to add sherry ... but then I got pregnant ... so I made it non-alcoholic ... and then I kept it that way ... and it's been so long I have forgotten the pleasure of sherry trifle.

I make the most "cheatingest" trifle, but everybody loves it.
Store bought sponge slab, soaked overnight in dry sherry. Cut up and layer with tinned fruit salad (drained), green and red jelly and store bought custard (sometimes brandy custard) then topped with cream. I make a huge bowl of it at Christmas which usually lasts until Boxing Day. It looks disgusting but they reckon it tastes even better by then 😉
