I love raspberries.

 

My last trifle was made with raspberries and fresh berries but why are they so expensive at Christmas?

Lealta, what are those things on top of the cream?

 

Katy, in the center of the top, are fresh raspberries that were dipped in sugar.  Around the edges are flowers I made out of royal frosting.  This type of frosting gets really hard and is great for decorating cakes too.

Lurker, my mother used to make curry with sultanas or raisins in ... I'm still recovering from that 😉

If I get sweet and sour pork take away, I ask for the sauce to be provided in a separate container. Then I just eat it as is ... the sauce goes in to the kid or the bin. Same with lemon chicken or duck.

Oh, I do make a couple of exceptions ... duck a l'orange is one. Lemon juice and olive oil vinaigrette on something like chicken salad (tonight's dinner).

But, they're DIFFERENT, aren't they?

Those who love rasberries/blueberries, why not grow your own?  The canes are not expensive to buy and the berries are so much nicer than the shop bought ones. Home grown strawberries are the only ones I will use, so sweet and no nasties sprayed on them

Ah yes, fruit and cheese is an entirely different thing. I like that.

Back to the recipes. I make a nice pepper sauce that I usually use on chicken schnitzel but it goes with most things.
Pretty simple. Into the pan you cooked the schnitzel (or whatever) toss in about a tablespoon of green pepper corns (I get them in a small tin from the supermarket), then splosh in a reasonable amount of port (maybe about 1/4 cup). Cook that for a couple of minutes then pour in 300ml cream. Reduce slightly. Done!

Oh, should have said. In the same AFTER you have cooked the schnitzel.

When I come back I will post another old pommie family favourite that I make at Christmas.  It is the only thing I really like dried currants and sultanas in.  The good old bread pudding.  (not bread and butter pudding)

It is my version of a Christmas cake because I don't like cake a lot.

 

I think a lot of recipes like bread pudding and rice pudding must come from depression days or war years when the housewife had to use whatever was available because of rations.

Katy, one of my favorite snack foods is made by putting curry powder and oil in a frying pan.  Get it really hot and then dump in about a cup of raisins.  Fry the raisins until they plump up.  Then add salted peanuts and banana chips.  Mix it all up and then put in a brown paper sack so some of the oil will soak up a bit.  Sprinkle a generous portion of nutmeg in the bag.  This is a salty/sweet snack and it's yummy.

My mother uses a vanilla instant pudding instead of custard in trifle. Very quick, and tastes pretty ok as well.

Why not grow your own raspberries?

Climate not suitable for ( too warm & humid). My family in NZ (Sth Island) live in a berry growing area, my brother has grown raspberries for sale as well.

The raspberries sold in the shops here are mostly from Tasmania.
